[Davao del Sur] Ate Marivic's Kapé - Honey Processed
Farmer: Marivic Dubria
Farm Location: Bansalan, Davao del Sur, Philippines
Coffee: Arabica - catimor
Process: Honey
We taste: Flat Tops milk chocolate · Pasas (raisins) · Vanilla
A limited honey-processed lot from Ate Marivic Dubria of Davao del Sur, one of Kapé’s first farming partners.
Ate Marivic is best known for her beautiful natural-processed coffees, so this small batch gives us the chance to experience her harvest in a different way. Through honey processing, some of the coffee cherry’s natural sugars remain around the seed as it dries, bringing out a wonderfully rounded, syrupy sweetness.
In the cup, we taste flat tops (iykyk!) milk chocolate, sweet pasas (raisins), and vanilla — comforting and gently fruity, with a soft, lingering sweetness.
But this coffee is also about the woman behind it.
Known affectionately as a “coffee queen” in her community, Ate Marivic has spent years growing exceptional coffee while sharing her knowledge with other women farmers. Her daughter is now following in her footsteps, carrying that knowledge into another generation.
We’ve had the privilege of sharing Ate Marivic’s coffees over the years. This limited honey-process lot is a new expression of her harvest—and another reminder of how much possibility there is in Philippine specialty coffee.
